Cream puffs pastry (choux pastry) is said to have been invented in 1540 by Popelini, Catherine de' Medici's chef, but the pastry cook's art only truly began to develop in the 17th century and the greatest innovator at the beginning of the 19th century was indubitably Marie Antoine CarĂªme.

The legend is that Vanilla Crescents were first made by a Viennese baker, following the defeat of the Turks after the first siege of Vienna. They were formed in the shape of a crescent to commemorate the end of the siege, the crescent moon being a Turkish emblem. Marie Antoinette introduced the Austrian Kipferl (crescent) to the Court of Versailles; from there, it developed into the well-known French croissant.

Linzertorte is one of Austria's most famous desserts. Believed to have originated in the City of Linz, written recipes began to appear in the early 1700s. Linzer Cookies use the same ingredients as the Linzertorte but present them in a different way; two cookies are sandwiched together with a layer of preserves or jam. When cut into a round shape with a round cutout they are known as Linzer Eyes (Linzer Augen).
